Vegan Carrot Cake
Vegan Carrot Cake

BASIC INGREDIENTS:
For the Cake
1/2 cup unsweetened applesauce
1 cup unsweetened almond milk
2 teaspoons pure vanilla extract
1 cup granulated sugar
1/2 cup coconut oil, melted (you can use canola oil instead)
2 1/4 cups cake flour
3 teaspoons baking powder
1 teaspoon baking soda
3 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
2 cups grated carrots, medium packed
For the Frosting
1/2 cup vegan cream cheese
1/2 cup vegan butter, softened
1 teaspoon vanilla extract
1/4 cup all-purpose flour
2 cups confectionery sugar (powder sugar)
OPTIONAL ADDITIONS:
You can add 1/2 cup chopped raisins to the cake mix. You can also decorate the cake with 1/4 cup chopped walnuts after frosting it.
PREPARATION:
Cake:
- Preheat the oven to 350 degrees Fahrenheit or 175 degrees Celsius.
- Lightly grease and flour two 9-inch round cake pans.
- In a large bowl, beat the applesauce, almond milk, vanilla, sugar, and oil.
- In a separate bowl, whisk together the cake flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix in dry ingredients with wet ingredients. Add the carrots and maybe, chopped raisins.
- Divide the mix between the two cake pans.
- Bake for approximately 30 to 40 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Transfer to a wire rack and cool for 10 minutes before turning out to cool completely. Allow the cakes to cool completely before frosting
Frosting:
- While the cakes are cooling, beat the cream cheese and butter together with an electric mixer until smooth and creamy.
- Add the vanilla extract and beat well.
- Add the flour and sugar powder a little at a time and beat until light and fluffy.
- Add more sugar powder until you reach the desired consistency.
- Refrigerate the frosting for approximately 20 minutes before frosting the cakes.
- Frost the top of one cake. Then add the second cake on top, and continue frosting the rest of the cake until it is completely covered.
- You may sprinkle with chopped walnuts. Refrigerate.
VARIATIONS:
You can add chopped raisins to the cake mix and you can also decorate it with chopped nuts after frosting it.
