Happy Rice Bowl

Ingredients:
Enough rice for two people
5 to 10 cm of cucumber
2 spring onions, or a small shallot, or ¼ of an onion
1 avocado
Optional – a couple of mushrooms, mange tout, etc (anything that can be eaten raw)
10 grams sesame seeds
A few small sheets of Japanese-style dried seaweed
A teaspoon of Miso paste
20ml of Teriyaki sauce
20 ml of Soya sauce
10 ml of Mirin
Preparation:
Extremely easy, quick and nurturing. While the rice is cooking (for me, that means 10-12 minutes in the microwave) thinly shred the dried seaweed, the cucumber, spring onions, and any other raw vegetables. Mix them all with the Mirin, Teriyaki, Soya sauce, Miso paste, and sesame seeds in a large bowl. Stir and allow to marinade together until the rice is ready. Meanwhile, cut the avocado into chunks. Ping! The rice is ready! Mix it thoroughly with the other ingredients. Place in two bowls. Add the avocado to the top of each bowl. Eat with chopsticks. Enjoy!
