BASIC INGREDIENTS:

zucchini, almond or other vegan milk, salt.

OPTIONAL ADDITIONS:

vegan cream cheese, vegetable stock, croutons.

PREPARATION:

  1. Wash, chop, and boil zucchini.
  2. Drain water, add enough vegan milk to cover half of the zucchini chunks.
  3. Blend well with blender.
  4. Add salt to taste, and maybe vegan cream cheese or vegetable stock.
  5. Keep on blending and tasting until it has the desired taste and consistency.

VARIATIONS:

Some people peel the zucchini, or add grated vegan parmesan, but the croutons are the best addition.
