BASIC INGREDIENTS:
zucchini, almond or other vegan milk, salt.
OPTIONAL ADDITIONS:
vegan cream cheese, vegetable stock, croutons.
PREPARATION:
- Wash, chop, and boil zucchini.
- Drain water, add enough vegan milk to cover half of the zucchini chunks.
- Blend well with blender.
- Add salt to taste, and maybe vegan cream cheese or vegetable stock.
- Keep on blending and tasting until it has the desired taste and consistency.
VARIATIONS:
Some people peel the zucchini, or add grated vegan parmesan, but the croutons are the best addition.
