Vegan Carrot Cake

BASIC INGREDIENTS:

For the Cake

1/2 cup unsweetened applesauce

1 cup unsweetened almond milk

2 teaspoons pure vanilla extract

1 cup granulated sugar

1/2 cup coconut oil, melted (you can use canola oil instead)

2 1/4 cups cake flour

3 teaspoons baking powder

1 teaspoon baking soda

3 teaspoons cinnamon

1/2 teaspoon nutmeg

1 teaspoon salt

2 cups grated carrots, medium packed

For the Frosting

1/2 cup vegan cream cheese

1/2 cup vegan butter, softened

1 teaspoon vanilla extract

1/4 cup all-purpose flour

2 cups confectionery sugar (powder sugar)

OPTIONAL ADDITIONS:

You can add 1/2 cup chopped raisins to the cake mix. You can also decorate the cake with 1/4 cup chopped walnuts after frosting it.

PREPARATION:

Cake:

  1. Preheat the oven to 350 degrees Fahrenheit or 175 degrees Celsius. 
  2. Lightly grease and flour two 9-inch round cake pans. 
  3. In a large bowl, beat the applesauce, almond milk, vanilla, sugar, and oil.
  4. In a separate bowl, whisk together the cake flour, baking powder, baking soda, cinnamon, nutmeg, and salt. 
  5. Mix in dry ingredients with wet ingredients. Add the carrots and maybe, chopped raisins.
  6. Divide the mix between the two cake pans.
  7. Bake for approximately 30 to 40 minutes or until a toothpick inserted into the center of the cakes comes out clean. 
  8. Transfer to a wire rack and cool for 10 minutes before turning out to cool completely. Allow the cakes to cool completely before frosting

Frosting:

  1. While the cakes are cooling, beat the cream cheese and butter together with an electric mixer until smooth and creamy. 
  2. Add the vanilla extract and beat well.
  3. Add the flour and sugar powder a little at a time and beat until light and fluffy. 
  4. Add more sugar powder until you reach the desired consistency.
  5. Refrigerate the frosting for approximately 20 minutes before frosting the cakes. 
  6. Frost the top of one cake. Then add the second cake on top, and continue frosting the rest of the cake until it is completely covered. 
  7. You may sprinkle with chopped walnuts. Refrigerate.

VARIATIONS:

You can add chopped raisins to the cake mix and you can also decorate it with chopped nuts after frosting it.
